Datu Puti vinegar — a pale‑amber Filipino cane vinegar (sukang maasim) with a clean, bright acetic acidity and subtle sweet cane notes; widely used as a table condiment and kitchen staple for sawsawan (dipping sauces), marinades (adobo), pickling (atchara), sinigang adjustments, escabeche, and to finish fried or grilled dishes.
- Sawsawan (dipping sauce): mixed with soy sauce, crushed garlic, chopped sili (chili), onion, and calamansi for fried fish, lechon kawali, lumpia, and grilled meats.
- Adobo & marinades: as the sour component in chicken/pork adobo or marinades to tenderize and flavor proteins.
