Eddoes are small starchy root vegetables that belong to the same family as Taro. They grow underground and are widely used across Asia, the Caribbean, and the Philippines. Compared to regular taro, eddoes are smaller, rounder, and slightly firmer, with a nutty flavor.
In the Philippines, eddoes are usually called “gabi.” They are an important ingredient in traditional dishes.
Popular Filipino dishes
- Laing – gabi leaves cooked in coconut milk with chili and shrimp or pork.
- Ginataang Gabi – eddoes cooked in coconut milk with fish or meat.
- Sinigang – sometimes added to the sour tamarind soup for thickness.
- Boiled gabi – simply boiled and eaten as a side dish.
