Striped bonito is a medium-sized, torpedo-shaped pelagic fish with silvery sides and dark horizontal streaks. Its flesh is firm and meaty with a moderately oily, umami-rich flavor—clean and oceanic but less intense than tuna or mackerel. It sears and grills very well, developing a crisp exterior while staying tender inside; it also takes well to quick cures, smoking, or bold marinades (citrus, soy, sesame). Serve simply with lemon or yuzu, scallions and toasted sesame, over rice or greens; pairs nicely with chilled sake, a crisp white wine, or a bright citrus-forward cocktail.
