Round eggplant is a smooth, oval-to-round variety of eggplant with glossy purple, lavender, green, or white skin. It has firm, creamy flesh and small edible seeds. Compared with long, slender eggplants, round varieties are often meatier and slightly milder, with a tender texture when cooked.
Uses
Round eggplant can be:
- Grilled, roasted, baked, or pan-fried
- Stuffed with vegetables, grains, meat, or cheese
- Added to curries, stews, soups, and stir-fries
- Used in ratatouille, moussaka, and eggplant parmesan
- Sliced for sandwiches, wraps, and salads
- Roasted and blended into dips such as baba ganoush
Wash the eggplant before use and remove the stem. The skin is edible, so peeling is optional. Salting sliced eggplant for 20–30 minutes can reduce bitterness and excess moisture, although many modern varieties do not require it.
Storage
- Store fresh eggplant in a cool, dry place if using within a day.
- For longer storage, keep it unwashed in the refrigerator’s vegetable drawer.
- Use within about 3–5 days for the best quality.
- Avoid storing it next to apples, bananas, or tomatoes, which can speed up ripening.
- Do not cut it until ready to use, as the flesh browns quickly.
- Cooked eggplant can be refrigerated in an airtight container for 3–4 days.
- For freezing, blanch or cook it first, then store in a sealed freezer container for up to 8–12 months.
