Black glutinous rice—sometimes called “sticky black rice” is a whole grain variety of rice known for its deep purple-black color and slightly sweet, nutty flavor. Despite the name, it’s not actually black when cooked; it turns a rich purple due to natural pigments called anthocyanins (the same antioxidants found in blueberries).

Unlike regular white rice, black glutinous rice has a sticky, chewy texture when cooked because it’s high in amylopectin starch. This makes it especially popular in desserts across Southeast and East Asia, such as sweet rice puddings, coconut rice dishes, and festival treats.
